Mutton handi: easy and delicious recipe

Mutton Handi.

Handi is a jar of clay used to cook. Which explains the name of the dish itself. It is quite common in Asian cuisines.

Formerly, when there were no non-stick utensils, people used these clay containers for cooking.

Now, with the advent of so much variation in cooking utensils, we have abandoned this century-old tradition.


  • 1 kg meat, lamb/mutton, is cut into bite-size pieces.
  • 1 teaspoon cumin seeds.
  • 1 teaspoon of coriander seeds or coriander powder.
  • 1 teaspoon black pepper.
  • Salt, as appropriate.
  • 1/2 tsp turmeric powder
  • 1 teaspoon red chile powder.
  • 1 medium onion (sliced).
  • 1 clove garlic 15 cloves garlic, smashed.
  • 1/2 cup oil
  • 2 cardamom
  • 1-inch stick cinnamon
  • 2 cloves
  • 2 green chilies.
  • 2 tomatoes, minced.
  • coriander leaves (for garnish)
  • Mint leaves (optional for garnish)

Roast the Cumin and coriander seeds.

Crush them with the peppercorns in a fine powder and put that powder away.

Put the meat in a Handi or skillet. Add 1 cup of water, salt, turmeric powder, hot pepper powder, sliced onion, and garlic. Cover and cook over medium heat until the meat reaches tenderness.

Add the oil when the meat is tender and the onion and garlic have been thoroughly mixed in the masala.

Then add the whole garam masala (cardamom, cinnamon, and cloves), green chili, and tomatoes, and cook until the tomatoes are soft and mushy.

Slow cooking until all the water is dry and the oil begins to leave the sides of the handi. At that stage, add the ground powder.

Stir, add the cilantro sheets, and remove from the heat.
